Why is a high-quality olive oil important?
Unfortunately, many store-bought EVOOs use combinations of olive oil with vegetable or soybean oils to cut costs. But high-quality olive oil is better for your health (and your palette) — once you’ve tried a truly flavorful EVOO, you can never go back.
So, how is pure olive oil made? Production involves six steps: Harvesting, processing, malaxation, pressing, refining, and bottling. Every fall — usually between October and November, depending on how ripe the olives should be for their distinct blends — olives are picked by machine or by hand. Then they’re crushed into pulp and milled into a thick paste. Malaxation involves adding water and then churning the entire paste. The next step is pressing, which separates the olive oil from the water and pulp mixture. But here’s the key: Lower-quality olive oils may refine their flavors using heat and chemicals, but a high-quality EVOO won’t. Finally, it’s bottled and shipped out to distributors or directly to you.
Finally, let’s discuss the age-old question: What is the difference between virgin olive oil and extra-virgin? According to The Kitchn, “Olive oil is graded by its level of acidity or free oleic acid. The amount of free oleic acid in olive oil indicates the extent to which fat has broken down into fatty acids.” Extra-virgin olive oil has a low level of oleic acid since it’s been unrefined — it’s also the highest quality you can purchase, as it comes with specific labeling standards and the most flavorful tastes.
